Peanut Butter Cookies

Prep Time: 10 min | Bake Time: 12 minutes | Yield: 24 cookies

Wet Ingredients:

  • 1 tbsp ground flax seeds + 3 tbsp water

  • 1/4 cup melted coconut oil

  • 1 tsp vanilla

  • 1/4 cup nut milk of choice (I used my home made hemp milk)

  • 3/4 cup peanut butter (I actually used crunchy with these cookies but smooth works well too)

  • 1/2 cup honey

Dry Ingredients:

  • 2 cups unbleached flour

  • 1/4 cup oats

  • 1/2 cup brown sugar

  • 1 tsp cinnamon

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Instructions:

  1. Set oven to bake at 350 degree Fahrenheit

  2. Combine all wet ingredients in one bowl

  3. Combine all dry ingredients in separate bowl

  4. Mix wet into dry and stir well

  5. Line cookie tray with parchment paper and roll dough into small balls, press down lightly

  6. Bake for 12 minutes

  7. Let cool and then enjoy!
