Chocolate Oatmeal Banana Bread

Prep Time: 15 min | Bake Time: 50-60 min | Yield: 1 loaf

Wet Ingredients:

  • 2 eggs (vegan option: flax egg)

  • 1 tsp vanilla

  • 3 tbsp milk (vegan option: nut milk)

  • 1/4 cup melted butter (vegan option: olive oil or coconut oil)

  • 3 ripe banans, mashed

  • 1/2 cup maple syrup

  • 3 tbsp yogurt (vegan option: non dairy yogurt)

Dry Ingredients:

  • 1.5 cup unbleached pastry flour (option to use whole wheat flour)

  • 1 cup rolled oats

  • 1 tsp cinnamon

  • 1/2 cup coconut sugar (or brown sugar)

  • 1 1/4 tsp baking soda

  • 1/2 tsp salt

  • optional: 1/2 cup chocolate chips (or sub raisins)

Instructions:

  1. Preheat oven to 350 degree fahrenheit

  2. Mix all wet ingredients together in large bowl

  3. Mix all dry ingredients together in a large bowl

  4. Pour wet ingredients slowly into dry ingredients stirring until well mixed

  5. Grease a loaf pan (with butter or oil) and pour batter

  6. Put in oven for between 50-60 minutes (depends on the oven), until a tester inserted into the center comes out clean

  7. Let cool entirely before removing from the pan and then enjoy!
