Vegan Chocolate Bean Power Balls

Total Time: 15 minutes | Freeze Time: 30 minutes Serving Size: approx. 17 power balls 

Special Note: Soak dates in hot water for approx. 5-10 minutes before processing. This recipe requires a food processor 

Ingredients:

  • 8 pitted dates (soak in hot water for 5-10 min prior)

  • one 14oz can drained white beans (I used cannellini)

  • 1/2 cup cacao powder

  • 1/4 cup oats

  • 1/4 cup hemp hearts

  • 1/2 cup coconut flakes

  • 2 tsp vanilla

  • 1/2 tsp salt

  • 1 tbsp melted coconut oil or coconut butter

Instructions: 

  1. In food processor, blend the white beans for approx 1 min

  2. Add dates and pulse blend for approx 30 seconds

  3. Add remaining ingredients and blend all together until mostly smooth (it is okay if there is a few chunks) *you will need to stop occasionally to push down the mixture on the sides of the processor to incorporate*

  4. Once blended, make the balls (about the size of a golf ball)

  5. Freeze for 30 minutes, laying flat on parchment paper to harden

  6. Transfer to the fridge (will last approx 5 days in fridge) note: you can store some in the freezer to keep them longer, just let them thaw before you consume!
