Oatmeal Cashew Chocolate Chip Cookies

Prep Time: 20 minutes | Bake Time: 15 minutes | Serving Size: 18-22 cookies

Special Note: This recipe requires soaking cashews for 4-6 hours in advance! You will require a food processor for this recipe.

Wet Ingredients: 

  • 2 eggs

  • 1 cup cashews (soaked for 4-6 hours)

  • 1/4 cup maple syrup

  • 1 1/4 cup almond milk (or nut milk of choice)

  • 1 1/2 tsp vanilla extract

  • 1/4 cup apple sauce

  • 1/4 cup olive oil

Dry Ingredients: 

  • 1 1/2 cup rolled oats

  • 2 cups spelt flour

  • 1/4 cup almond flour

  • 1 cup coconut sugar

  • 1 tsp baking soda

  • 1 1/2 tsp baking powder

  • 1 tsp salt

  • 3/4 cup - 1 cup chocolate chips

  • 1/2 cup raisins (optional)

Instructions: 

  1. Set oven to bake at 350 degree fahrenheit

  2. In food processor blend soaked cashews until smooth approx. 1 minute (remove water before blending)

  3. Add all wet ingredients into food processor and blend for approx. another 1 min. Pulse a few times to get cashews to mix with all other ingredients

  4. In large mixing bowl, add all dry ingredients (except chocolate chips & raisins) and mix with spoon

  5. Pour wet ingredients slowly into fixing bowl with dry ingredients and stir together until well mixed

  6. Add chocolate chips (and raisins if desired) to bowl. Stir a few times.

  7. Line cookie tray with parchment paper

  8. Dollop approx. 1/4 cup of dough for each cookie onto parchment paper

  9. Bake in oven for 12 minutes

  10. Remove and let cool for 10 min before enjoying!
