Breakfast Brownie

Prep Time: 15 minutes | Bake Time: 25 minutes | Serving Size: 20-24 brownies 

Special Note: The dates need to be soaked in boiled water and the chia seeds need to be soaked in cold water for approx. 5-10 minutes before processing. This recipe requires a food processor. 

Wet Ingredients: 

  • 7 dates (soaked in boiled water)

  • 2 tbsp chia seeds (soaked in 2 tbsp water)

  • 2 eggs

  • 1 1/2 tsp vanilla

  • 1 cup non dairy milk i.e. almond milk, hemp milk

  • 1/2 cup sunflower butter

Dry Ingredients: 

  • 1/4 cup cacao powder

  • 2 1/4 cup spelt flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 cup sugar (I used brown sugar)

  • 2 tbsp cinnamon

  • 1/2 tsp salt

  • 2 tbsp hemp hearts

  • 3 tbsp raisins

  • 2 tbsp cacao nibs (optional)

Instructions: 

  1. Preheat oven to 350 degree Fahrenheit

  2. Soak dates in boiled water for approx. 5 - 10 minutes (to soften prior to blending)

  3. Soak chia seeds in 8 tbsp cold water in small bowl

  4. In large bowl mix together all dry ingredients

  5. In medium bowl whisk together all wet ingredients (minus dates and chia seeds)

  6. After 10 minutes of soaking, blend in food processor the dates (remove soaking water and pits prior) and chia (keep water) until smooth

  7. Add the date and chia paste to the wet ingredients and mix

  8. Pour wet ingredients into dry ingredients bowl

  9. Line with parchment paper 8x8 inch pan

  10. Pour batter into pan and smooth out (may be sticky)

  11. Optional: top with cacao nibs for crunch!

  12. Bake for 20 minutes

  13. Turn off oven and leave for another 5 minutes then remove brownie

  14. Let cool before removing from pan and enjoying
